We had this cheesecake at a friends house. Oh my word. It doesn't necessarily look pretty but the taste is heavenly. Even my dad had 2 pieces!!
The original recipe was for Oreo biscuits but as they are so expensive I swapped them for Neo's, result even better in my opinion.
510g Neo chocolate sandwich cookies
60g butter, melted
900g soft cream cheese, softened
105g caster sugar
1 tsp vanilla
350ml double cream
Line 13x9 inch pan with foil, with ends of foil extending over sides of pan.
Coarsley chop 125g of cookies and set aside.
Finely crush remaining cookies, mix with melted butter.
Press firmly on to bottom of prepared pan.
Refrigerate while preparing filling.
Beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended.
Whip the cream, then gently sir into the cheese along with chopped cookies.
Spoonover crust and cover.
Refrigerate for at least 4 hours but preferably overnight.
Store any leftovers in fridge.
Looks amazing @mrsblazer but much too complicated for me, will have to try some next time we are in Coventry
@mrsblazer This is a really nice cheese cake and iv'e now made it 3 times and it didn't make very much and only six portions. The second time I doubled the ingredients and it made six better size portions. The third time, I used 3 times the ingredients and this time it made 6 decent size portions and I shared two portions with my neighbour yesterday.
Did you use my recipe @BigAll.?Mine made about 8 large portions but 16 smaller ones.
@mrsblazer Yes, but in a 3 inch deep tin, it only made 6 portions and they were not that deep, so (as I said) I doubled it and then trippled it to get it to almost 3 inches deep.
Does it freeze @mrsblazer. I like to freeze cheesecake in individual portions, it's very convenient!
also, which colour packet Neo biscuits did you use?
Haven't tried freezing it @Stixxee as there is never any left but would think it would be ok. I used the double choc ones not the ones with the vanilla filling. Think the box is purple.
