225g plain flour
3 teaspoons baking powdwe
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ginger
100g caster sugar
150 ml milk
3 tablespoons sunflower oil
40g unsalted butter (melted)
70g golden sultanas
Preheat oven 190 degrees c
Put paper cases into muffin moulds
Peel, core and dice apples.
Beat egg and stir in milk.
Add oil, melted butter and stir in diced apples.
Mix dry ingredients together well in another bowl.
Add wet mixture to dry ingredients and stir well.
Stir in sultanas.
Spoon mixture into muffin cases.
Sprinkle with demerera sugar.
Bake for 20 minutes,
I found the recipe whilst trying to use all the apples we had. I took them to ice hockey and one gent ate 8 out of the 10. He said he had never tasted a muffin like it
I baked some just for him the following week and he hid the tun in his bag and took one out every now and again I said he could share if he liked but he took the rest home! Last week he returned the box and asked if there was a refill
He had to share the batch this week as I gave some to @Barb hubby.
